Wholegrain Autumn Oatmeal
Autumn is in full swing. Leaves are falling and the temperature drops quickly. The mornings are crisp -- how we love it. All we want is to go outside, sit on blankets, wrapped in blankets, with steamy hot bowls of oatmeal in our hands. This multigrain autumn oatmeal is full of healthy grains, spiced up with cinnamon, sweetened with apple, and made incredible creamy with almond milk.
Wholegrain Autumn Oatmeal
Serves 4
Ingredients
1 cup rolled oats
1/3 cup barley flakes
1/4 cup red cooked quinoa
1 tbs dried apple slices, chopped
1 tbs ground flaxseeds
Honey, to taste
1 tsp ground cinnamon
Pinch of salt
3 cups almond milk -- add more for a looser consistency
Toppings
Almond milk, to taste
Chopped apple
Omega 4 seed mix -- pumpkin seeds, sunflower seeds, golden linseed, sesame seeds
Honey, to taste
Directions
In a small saucepan, combine rolled oats, barley flakes, cooked quinoa, apple slices and flaxseeds. Add almond milk and bring to a boil. Add cinnamon, a pinch of salt and honey to taste - stir until desired consistency. Divide oatmeal over two bowls and top with a splash of almond milk, chopped apple, omega 4 seed mix and honey to taste.
