Sesame and Lime Crumble, Coconut Yogurt and Edible Flowers

With this heat, all we want to do is sip on ice cold fresh coconuts under a palm tree with our feet in the water - but sometimes you've just got to do with sitting in front of a fan, sipping on iced tap water, splashing yourself occasionally in the shower! 

We've been eating a lot of fresh fruits, and refuse to turn on any source of heat. Which means dinners this week were fairly simple but nonetheless delicious.

One of our discoveries was this delicious cooling dessert: a sesame & lime crumble over cold coconut yoghurt. It almost brings us back to our tropical days in Bali... well, almost!

Sesame and Lime Crumble, Coconut Yoghurt and Edible Flowers
Serves 2

Ingredients:
1 cup of white sesame seeds
Juice of 1 lime
Zest of 1 lime
2 tablespoon of maple syrup (to taste)
1 small pinch of salt
Coconut yoghurt
Edible flowers (optional)

Method
1. Place all ingredients in a food processor and mix until combined into a crumble
2. Adjust sweetness to taste with more maple syrup if needed
3. Sprinkle the crumble onto cold coconut yoghurt
4. Decorate with edible flowers
5. Enjoy!
